Mise en place: Roasted Branzino
Our Sunday dinner became extra special as we are celebrating getting a table at the impossible to book restaurant, El Celler de Can Roca in Girona, Spain where reservations are out almost a year in advance. Looks like we are coming back to Spain sooner than I thought, and I am not going to complain!
For our Sunday dinner, I will be roasting this beautiful Branzino, aka Mediterranean Sea Bass that I got from the fishmongers at @uwajimaya. I will stuff it with aromatics of lemons, rosemary, parsley and thyme. It will be roasted on a bed of fennel and shallots. Side of roasted white, purple and green asparagus for that Spring time touch.
